Black lemons, also known as dried Persian black limes or dried limes from the Middle East, are most commonly used in slow-cooked dishes, infusing sauces with complex citrus flavors.
These dried black limes are made from mature, fresh, and green limes that have been soaked in salt water and left to dry naturally in the sun for a longer drying period, with this way we have dried limes with black skin which also helps them to develop stronger musky, fermented aroma.
Other names are Limoo Amani and Noomi Basra.
